At a retail price of around $50 for a 750ml bottle, we’re honestly hesitant to spend the money. Rabbit Hole Kentucky Straight Bourbon Whiskey is bottled at 95 proof and is made from a mash bill of 70% Corn, 10% Toasted Wheat, 10% Honeydew Oats and 10% Malted Oats. According to the bottle, this whiskey is “aged for at least 3 years”. In full disclosure, this bourbon was provided to us by Rabbit Hole to sample. With that said, all information provided in this review is 100% honest and a true reflection of our experience.
The main orange quality from the nose does not follow on the palate, however there is still some citrus character in the form of orange marmalade and orange peel. The texture on the tongue has a layer of wax/paraffin that covers the mouth. There is so much sweetness and texture with this bourbon that it reminds one of eating fresh honey. Finally, there are notes of brown sugar and butter, like the syrup you might find in an ice cream sundae.

The finish of this bourbon is in the “medium/long” category, which is impressive considering its young age. A rich layer of honey, brown sugar and butterscotch makes for the ultimate cotton candy.

Just weeks after announcing its sale to Pernod Ricard, Rabbit Hole Distillery is launching a new whiskey – as well as a complete overhaul of its core range – which will be launched next month. The change is meant to honor a legendary figure in Louisville and in the life of Rabbit Hole founder Kaveh Zamanian, and the new whiskey — a straight bourbon — is tied to the 19th-century spirit.

The new Rabbit Hole whiskey is made from 70% corn, 25% malted rye and 5% malted barley, aged for less than four years in new charred and charred oak casks, and bottled at 47.5% ABV. Finally, there’s a cask of 46.5% ABV PX Rabbit Hole sherry bourbon called Dareringer ($80). Called Derringer, Dareringer is made from 68% corn, 18% wheat and 14% malted barley. The whiskey’s name is a nod to Zamania’s wife, Heather, who first introduced him to bourbon. “A sherry cask finish is a very elegant and sweet expression of one of our bourbons,” says Zamania. “My wife, Heather, is a Louisvillian, as well as elegant, sweet and charming. And she is, in a sense, my muse behind the brand.”

Heigold and other newly created whiskeys will go on sale at the distillery on September 1, with major distribution to 18 states, and eventually nationwide, rolling out later that month. Rabbit Hole also has plans to change the name of its gin to Wool and Water – named after Episode 5 “Through the Looking Glass” – to be announced later this year.
