The team behind hit Thai seafood restaurant Fish Cheeks is headed to Brooklyn for their next restaurant — except this time, owner Jenn Saesue and chef Ohm Suansilphong are very relaxed.

Two Isan Chickens will open at Dekalb’s Market Hall, serving up their favorite Thai street food kitchen. The restaurant specializes in colorful dishes that represent the Thai region of Isan, an area on the border of Laos and Cambodia, filled with ingredients such as chilies, tamarind and lime. The kitchen will be run by Suansilphong, who currently splits her time between the hall and Fish Cheeks, he said. It is part of the team’s ambitious expansion plan.

A popular dish, Isan-style grilled chicken marinated in garlic, turmeric and coriander root. A number of fish cheek hits will also appear on the store’s menu, such as grilled pork cheeks seasoned with salsa sauce and fried chicken wings, which Saesue says are smothered in a “Dorito-like” sauce made from chili, lime and mint.

For Isan chicken, prices typically range from $9 to $15, with rice at $3 and vegan coconut ice cream at $3.50 per scoop. Drinks, Thai iced tea and coffee on tap are $4.

The new restaurant is a way for the group to expand its footprint in C, the group said.

“We don’t want to open a restaurant yet because we’re a small group and I think a place like Dekalb is a good step for us,” Saesue said. “We don’t suffer a lot of money and we don’t have to worry about a lot of overhead.”

They plan to use both the kitchen to train and teach student chefs about Thai cuisine, and more restaurants could follow as the group grows, he said.

The fast-casual location opens on Monday, December 17th at the basement of 445 Albee Square West in downtown Brooklyn, with a food court featuring more than 40 vendors. Chicken Isan is open daily from 11:00 a.m. at 10:00 p.m.
