Add the vinegar and brown sugar and stir with a spoon to combine all the ingredients and dissolve the sugar completely.

Fried Jamaican Escovitch Fish
This time I decided to grab a seafood dish I loved when I visited Jamaica earlier this year: escowich fish.
For a simple redfish dish, you can use whole fish or special fish. All fish take a little time to cook so I decided to share with you a simple weekly recipe using fish.
To make sure I got the recipe right, I invited Vince, the chef and owner of Irie Kitchen, a Jamaican restaurant in West Michigan, into the kitchen.
One of the first tips I got from Vince was to slice the fish slowly 3 or 4 times, being careful not to overcook it all. This allows the juices to soak into the fish preparation for a delicious final meal. Additionally, it prevents the fish from sticking while cooking in the pan.
This Tangy Escovitch Fish Connects Jamaica To Its Spanish Past
Next, you’ll generously rub both sides of the filets with jerk seasoning and your favorite all-purpose seasoning blend. Next, cook the fish in a hot pan until golden brown on all sides before removing from the pan.
In the same pan, you can start cooking carrots, peppers and onions. For extra spice, we add a bunch of herbs, including fresh thyme and Scotch bonnet.
Be sure to add salt and pepper as you go to add flavor to the entire dish.
To increase the taste, vegetables are mixed with vinegar and a pinch of sugar. Boil as you go and don’t be afraid to add more vinegar or sugar if you like.

Before serving, return the fish to the pan to reheat. Check the spices before serving and adjust them properly.
The result is a delicious, sweet and slightly spicy fish dish. Perfectly balanced and full of flavor, this authentic Jamaican seafood dish is gluten-free, low-carb and high-protein.
If you can’t find snapper, you can use any firm white fish like halibut or whitefish. The real fish once used in Jamaica was the snapper.
Before serving, I like to garnish with some chopped herbs. It is delicious on its own or you can serve it with Jamaican rice and beans.
